SPANISH CHICKEN RECIPE
6 Chicken Thighs
1 Red Pepper (diced)
1 Yellow Pepper (diced)
2 Onions (diced)
4 Cloves of Garlic (minced)
½ Ring of Chorizo Sausage (sliced)
2 tsp Smoked Paprika
Salt & Pepper to season
Coriander to garnish
2 tbsp Olive Oil

Step 1: Season the chicken thighs with salt and pepper.
Step 2: Heat the olive oil in a large pan.
Step 3: Add the diced peppers, onions and half of the minced garlic. Fry on a medium heat for 3 minutes stirring regularly.
Step 4: Turn the heat down to low, cover peppers and onions with kitchen foil and leave for 15 minutes to allow them to soften. Stir occasionally.
Step 5: Remove the foil and put onion and peppers to one side in a dish.
Step 6: Add a little more olive oil to the pan. Add the seasoned chicken thighs and remaining minced garlic to the pan. Cook the chicken thighs for 7 to 8 minutes on a medium heat. Turn occasionally.
Step 7: When the chicken thighs are cooked through cut them into small bitesize pieces.
Step 8: Add the sliced chorizo to the pan with the chicken thighs and stir well for 2 minutes.
Step 9: Add the smoked paprika, onions and peppers to the pan and stir well for 4 minutes.
Your Spanish Chicken is now ready to dish up. Enjoy!
