Penthouse is a cut from the Silverside. A popular choice for the smaller roasts. Lean, full of flavour and very easy to carve. Penthouse is a boneless joint with a fine texture and another great choice for roasting. Cook rare to medium rare, let the meat rest after cooking and then carve into thin slices to fully appreciate the tenderness.

SUITABLE FOR HOME FREEZING
Freeze on day of purchase – Store between -18°C to -25ºC.
Freezer shelf life is 4 months from purchase.
Defrost in refrigerator for 8-12 hours before cooking.
Once defrosted store between 0 – 5°C. Use within 24 hours.
Do NOT re-freeze once defrosted.
Place into a roasting tray, and into a preheated oven set at 180°C. For best results a probe is recommended.
Well-done 70°C and above
