CHICKEN TIKKA MASALA RECIPE

Chicken Tikka Masala

SERVES 2 to 3

Ingredients:

2 Chicken Breasts (diced)

For the Marinade:

½ tsp Chilli Powder

½ tsp Cumin Powder

½ tsp Garam Masala

½ tsp Salt

1 tsp Coriander Powder

1 tsp Kashmiri Chilli Powder or Smoked Paprika

2 tbsp Full Fat Greek Style Yoghurt

1 tbsp Lemon Juice

1 tbsp Garlic & Ginger Paste

1 tbsp Olive Oil

For the Sauce:

1 Large Onion (diced)

1 tbsp Garlic and Ginger Paste

½ Tin of Tomatoes

½ tsp Salt

½ tsp Turmeric

1 tbsp Kashmiri Chilli Powder or Smoked Paprika

1 tsp Coriander Powder

1 tbsp Cumin Seeds (crushed)

½ tsp Sugar

½ Cup of Water

2 - 3 tbsp Single Cream

1 tbsp Fenugreek Leaves (Methi) or Fresh Coriander( Optional extra)

Marinade the chicken:

Step 1: Dice the chicken and put into a bowl.

Step 2: Add the marinade ingredients and mix together well.

Step 3: Put in fridge and leave chicken to marinade for a minimum of 2 hours. Overnight is even better.

Cooking:

Step 1: Heat some oil in a wok or large pan.

Step 2: Place the marinated chicken into the wok and fry on a medium heat for 6 to 7 minutes. Turn the chicken occasionally. Make sure you get some colour on the chicken.

Step 3: Remove the chicken from the wok into a dish and leave to one side.

Step 4: Add a little more oil to the wok and add the diced onion. Fry the diced onions until golden.

Step 5: Add the minced garlic & ginger to the onions and stir well for 1½ minutes to take away the rawness.

Step 6: Add the tomatoes and stir well for 2 minutes and reduce the liquid.

Step 7: Add the salt, turmeric, kashmiri chilli powder (or smoked paprika), coriander powder and cumin seeds. Stir well for 1½ minutes.

Step 8: Add the sugar and stir well for 30 seconds.

Step 9: Put the chicken, that you had put to one side, back into the wok and stir well for 5 minutes.

Step 10: Add the water to the wok and stir well for another 5 minutes.

Step 11: Add the single cream and fenugreek leaves (or fresh coriander). Stir well for 1 minute.

Your Chicken Tikka Masala is now ready to dish up. Enjoy!
