Butter Chicken



1 Chicken Breast (diced)

For the Marinade:

2 Cloves of Garlic (minced)

1 tsp Ginger (minced)

1 tsp Chilli Powder

½ tsp Cumin Powder

1 tsp Coriander Powder

1 tbsp Full Fat Greek Style Yoghurt

The Juice of ½ Lemon

For the Sauce:

1 Medium Onion

2x 40g Butter (unsalted)

60g Cashew Nuts (unsalted)

½ Tin of Chopped Tomatoes

2 Cloves of Garlic (minced)

1 tbsp Garam Masala

½ tsp Salt

1 tsp Sugar

A Splash of Single Cream

20g Ghee (optional)

100ml Water

Marinade the chicken:

Step 1: Dice the chicken and put into a bowl.

Step 2: Add the marinade ingredients and mix together well.

Step 3: Put in fridge and leave chicken to marinade for a minimum of 1 hour. Overnight is even better.


Step 1: Heat some oil in a large pan.

Step 2: Place the marinated chicken into the pan and fry on a medium heat for 6 to 7 minutes. Turn the chicken occasionally. Make sure you get some colour on the chicken.

Step 3: Remove the chicken from the pan into a dish and leave to one side.

Step 4: Add the Ghee (or a little more oil) and 40g of butter to the pan and add the diced onion. Fry the diced onions until golden.

Step 5: Add the chopped tomatoes and the cashew nuts. Fry for 4 minutes. Stir regularly.

Step 6: Add the garam masala, sugar and the garlic. Fry for 2 minutes. Stir regularly.

Step 7: Add the salt and 50ml of the water. Stir well.

Step 8: Remove the sauce from the pan, either into a bowl and blend using an electric hand blender or into a stand alone electric blender. Blend the sauce for at least 30 seconds.

Step 9: Sieve the sauce back into the pan and add the remaining 50ml of water.

Step 10: On a medium heat, put the cooked chicken back into the pan and add the other 40g of butter. Stir occasionally for 4 minutes.

Step 11: Finally, add the cream and stir well.

Your Butter Chicken is now ready to dish up. Enjoy!
