BEEF LASAGNE RECIPE

Beef Lasagne

SERVES 4 to 5

Ingredients:

2 Rashers of Smoked Streaky Bacon (finely chopped)

2 Celery Sticks (finely chopped)

2 Medium Onions (diced)

500g Lean Beef Mince

4 Cloves of Garlic (minced)

1½ tsp Dried Oregano

½ tsp Salt

½ Glass of Red Wine

1 Beef Stock Cube

1 Tin of Chopped Tomatoes

2 tbsp Tomato Puree

1 tsp Sugar

Ground Black Pepper

Dried or Fresh Lasagne Sheets

Sliced Mozzarella (optional)

40g Mature Cheddar Cheese (topping)

For the Béchamel Sauce

160g Mature Cheddar Cheese (grated)

40g Unsalted Butter

2 tbsp Plain Flour

A pinch of Nutmeg (grated)

1 Pint of Full Fat Milk

To make the Ragu

Step 1: Heat some olive oil in a large pan.

Step 2: Add the smoked streaky bacon to the pan and fry on a medium heat for 2 minutes stirring regularly.

Step 3: Add the chopped sticks of celery and fry for 5 minutes. Stir regularly.

Step 4: Add the diced onions to the pan and fry for 5 to 6 minutes until the onions have softened. Stir regularly.

Step 5: Add the lean beef mince to the pan and fry for 7 to 8 minutes. Stir regularly.

Step 6: And the minced garlic, oregano and salt to the pan and fry for 3 minutes. Stir regularly.

Step 7: Add the red wine and beef stock cube to the pan and stir well for 4 minutes.

Step 8: Add the tin of chopped tomatoes and tomato puree to the pan and stir well for 4 minutes.

Step 9: Add the sugar to the pan and season with cracked black pepper. Turn the heat down to low and simmer for 5 minutes. Stir occasionally.

Step 10: Take the pan off the heat and leave to one side.

To make the Béchamel Sauce

Step 1: Melt the butter in a sauce pan over a low heat.

Step 2: Add the plain flour to the melted butter and stir well.

Step 3: Add the milk bit by bit ensuring to stir continuously.

Step 4: Once all the milk has been added, bring the sauce slowly to the boil and add the grated nutmeg. Continue to stir continuously.

Step 5: Add half of the 160g of grated cheese to the sauce and stir well.

Step 6: Add the rest of the grated cheese and stir continuously until sauce thickens.

Build your Lasagne

Step 1: In a deep rectangular oven dish put a layer of the Ragu in the bottom.

Step 2: Add a layer of the Béchamel sauce.

Step 3: Add a layer of lasagne pasta sheets.

Step 4: Add another layer of the Ragu.

Step 5: Add a layer of sliced Mozzarella (optional).

Step 6: Add another layer of the Béchamel sauce.

Step 7: Add another layer of the lasagne pasta sheets.

Step 8: Add another layer of sliced Mozzarella (optional).

Step 9: Add another layer of the Béchamel sauce.

Step 10: Add another layer of lasagne pasta sheets.

Step 11: Add another layer of the Ragu.

Step 12: Add a final layer of sliced Mozzarella (optional).

Step 13: Add another layer of the Béchamel sauce.

Step 14: Add a final layer of lasagne pasta sheets.

Step 15: Add a final layer of the Ragu.

Step 16: Add a final layer of the Béchamel sauce.

Step 17: Finally, add the 40g of the grated cheese to the top of your lasagne.

Oven Cook your Lasagne

Step 1: Preheat your oven to 160°C.

Step 2: Cover your lasagne with kitchen foil and put into the oven, on the middle shelf, for 35 minutes.

Step 3: Take the lasagne out of the oven and remove the kitchen foil.

Step 4: Put the lasagne back in the oven cook for a further 10 minutes.

Your Beef Lasagne is now ready to dish up. Enjoy!
